How to cook Chicken Pepper Soup ?
Pepper Soup is a spicy, light, and flavorful soup that is very popular in West Africa. It can be prepared with chicken, fish, meat, or seafood. In this recipe, we will prepare a delicious chicken version.

Ingredients
- 500 g chicken
- 1 onion
- 2–3 fresh peppers
- 2 cloves of garlic
- A small piece of ginger
- 1–2 fresh tomatoes
- 1 teaspoon black pepper
- 1 teaspoon paprika or ground chili pepper
- 1 teaspoon pepper soup spice mix
- Salt to taste
- 1 liter of water
- A few fresh coriander or parsley leaves
Preparation
- Clean the chicken thoroughly and cut it into medium-sized pieces.
- Peel the onion, garlic, and ginger. Wash the tomatoes and fresh peppers.
- Blend or crush the onion, garlic, ginger, tomatoes, and peppers together.
- Place the chicken pieces in a pot and add the blended mixture.
- Add the black pepper, paprika, pepper soup spice mix, and salt.
- Pour in about 1 liter of water and mix well.
- Bring the mixture to a boil over medium heat.
- Cover the pot and cook for 30–40 minutes, until the chicken is tender and the flavors are well combined.
- Taste the soup and adjust the salt and pepper according to your preference.
- Add a few fresh coriander or parsley leaves at the end of cooking.
- Let the soup rest for about 5 minutes before serving to allow the flavors to develop.
Serving and Enjoyment
Serve the Pepper Soup hot, directly in bowls.
It can be enjoyed on its own as a light soup or served with:
- Fresh bread
- White rice
- Boiled yam
- Fried or boiled plantain
- Potatoes
- Gari
For a more appetizing presentation, garnish each bowl with a few fresh parsley or coriander leaves and, if desired, a small piece of fresh pepper.
Tip: Adjust the amount of pepper according to your preferred level of spiciness. For an even more flavorful Pepper Soup, you can marinate the chicken with some of the spices for 15–30 minutes before cooking.
